Keto Buckeye Bars

A few years ago, I changed to a keto diet. I was able to change my diet because I set myself up for success. For me, I needed to clean out all the food that would tempt me to fall back into unhealthy eating. I was also realistic about my sweet tooth so I would need to keep keto-friendly sweets on hand.

Keto sweets needed to be easy and use ingredients that I would normally stock for keto baking. Having a keto-friendly sweet in the house helps me stay on track and achieve my health goals. My current favorite keto sweet is the Keto Buckeye Bars. They are no-bake, simple, and satisfying.

Finding the perfect sweetener for me took some time. Some of the recommended sweeteners for the keto diet made my stomach uncomfortable. When I came across Swerve, I was happy with the taste. I bake exclusively with the confectioners Swerve and the brown sugar Swerve. Even if recipes call for the granular Swerve, I just substitute for a little less confectioners. The texture of the final baked good is better when I use the finer Swerve.

Keto buckeye bars

Makes one 5 x 5 pan

Ingredients

  • 2 Tbsp Butter
  • 1/2 Cup Peanut Butter
  • 1/4 Cup Swerve confectioners
  • 3/4 Cup Almond Flour
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 cup of Lily’s Chocolate
  1. Mix all the ingredients together except the Lily’s Chocolate
  2. Press into a 5×5 pan
  3. Melt 1/4 cup of Lily’s Chocolate in the microwave
  4. Pour over the peanut butter bars
  5. Put in the fridge until the chocolate firms up. Enjoy!
